Bran & Fruit Muffins Recipe

Ingredients
  • 2 tbsps vinegar .
  • 1/2 c millet .
  • 1/2 c dried apricots .
  • 3/4 c dried cranberries .
  • 1/4 c melted butter .
  • 1/2 c light brown sugar .
  • 2 c nonfat milk .
  • 2 c unprocessed wheat bran .
  • 2 c whole wheat pastry flour .
  • 1/2 tsp salt .
  • 1/4 tsp baking soda .
  • 1/2 c walnuts .
  • 1 tbsp baking powder .
  • 1/4 c Splenda Sugar Blend for Baking .
  • 2 eggs

Directions
  • Step #1 Preheat oven to 375.
  • Step #2 Combine milk & vinegar, set aside.
  • Step #3 Finely chop cranberries, apricots & walnuts & place this In a large-ish bowl.
  • Step #4 Add Flour, baking powder, sugars, baking soda, salt, wheat bran, & millet.
  • Step #5 Toss to coat fruit.
  • Step #6 Add eggs & butter to the milk mixture.
  • Step #7 Pour egg mixture into flour, do not overmix.
  • Step #8 Scoop into muffin pans that have been sprayed with pam.
  • Step #9 Bake 20-25 min.
