Herbed Top Round Roast Recipe

Ingredients
  • 5 garlic cloves, halved .
  • 1/2 c water .
  • 1 tbsp rosemary .
  • 2 pieces bacon, cooked (not crispy) .
  • 1 tsp kosher salt .
  • 2 tbsps olive oil .
  • 1/2 medium onion, thinly sliced .
  • 1 tbsp thyme .
  • 1 tbsp black pepper .
  • 3 lbs top round roast .
  • 1/2 c red wine

Directions
  • Step #1 Pour the red wine & water into the slow cooker (aka crockpot) crock; set aside.
  • Step #2 In a small bowl, pepper, salt, mix the herbs, & olive oil; stir this to mix.
  • Step #3 Using clean hands, rub the oil & herb mixture all over the beef roast.
  • Step #4 Place the roast into the slow cooker (aka crockpot) crock.
  • Step #5 Sprinkle top the garlic & onions aroudn the raost & lay the bacon strips over the top of the roast.
  • Step #6 Cover up & cook on LOW for 10 hrs.
  • Step #7 Before serving, flip the roast over in the slow cooker (aka crockpot), then turn the slow cooker (aka crockpot) off & let the roast rest in the slow cooker (aka crockpot) for about 15 mins.
  • Step #8 Remove roast to a platter & let it drain for a few mins.
  • Step #9 To serve, use a sharp knife to slice the meat against the grain.
  • Step #10 If you like, dip the roast slices into the cooking juices before serving, or serve the cooking juices alongside the beef.
