Ingredients
1/4 c white wine
1 tbsp olive oil
2 lbs fresh cherrystone or littleneck clams, scrubbed
1/2 c finely sliced green bell pepper
1/2 c sliced green onions, white part only
1 (10 oz) can sliced tomatoes with green chile peppers
1/2 c finely sliced celery
2 tsps minced garlic
Directions
Step #1 Heat oil in a pot large enough to hold your clams, over med-heat/flame.
Step #2 Add the onions, stirring until tender, green pepper, celery & garlic; & cook, about 5 mins.
Step #3 Stir in the can of tomatoes with green chilies, wine & clams.
Step #4 Turn the heat up to medium-high, cover the pot, & cook for 5 to 8 mins, or just until all of the clams have opened.
Step #5 Remove from heat as soon as possible.
