Clams Creole Recipe

Ingredients
  • 1/4 c white wine
  • 1 tbsp olive oil
  • 2 lbs fresh cherrystone or littleneck clams, scrubbed
  • 1/2 c finely sliced green bell pepper
  • 1/2 c sliced green onions, white part only
  • 1 (10 oz) can sliced tomatoes with green chile peppers
  • 1/2 c finely sliced celery
  • 2 tsps minced garlic

Directions
  • Step #1 Heat oil in a pot large enough to hold your clams, over med-heat/flame.
  • Step #2 Add the onions, stirring until tender, green pepper, celery & garlic; & cook, about 5 mins.
  • Step #3 Stir in the can of tomatoes with green chilies, wine & clams.
  • Step #4 Turn the heat up to medium-high, cover the pot, & cook for 5 to 8 mins, or just until all of the clams have opened.
  • Step #5 Remove from heat as soon as possible.
