Pumpkin Pie Pudding Recipe

Ingredients
  • 1 (15 oz) can pumpkin .
  • whipped topping (optional) .
  • 2 tbsps butter, melted (or margarine) .
  • 2 tbsps vanilla .
  • 1/2 c biscuit mix .
  • 2 beaten eggs .
  • 2 1/2 tsps pumpkin pie spice .
  • 3/4 c sugar .
  • 1 (12 oz) can evaporated milk

Directions
  • Step #1 In large bowl, mix first 8 ingredients.
  • Step #2 Transfer to a slow cooker (aka crockpot), coated with nonstick cooking spray.
  • Step #3 Cover up.
  • Step #4 Cook on LOW 6-7 hrs.
  • Step #5 Serve with whipped topping if desired.
