Dad's Oyster Dressing Recipe

Ingredients
  • salt to taste
  • 2 c wild rice
  • ground black pepper to taste
  • 1 pint unopened, fresh, live medium oysters
  • 2 stalks sliced celery
  • 2 pinches paprika
  • 3 tbsps sliced fresh parsley
  • 1/2 lb pork sausage
  • 1 bunch green onions, sliced

Directions
  • Step #1 Open & quarter the oysters.
  • Step #2 Reserve the liquid.
  • Step #3 Cook rice in boiling salted water till tender, about 40 mins.
  • Step #4 Drain, & place this in shallow pan.
  • Step #5 Place pan in a 275 degree F(135 degree C) oven to dry out for a few mins.
  • Step #6 Saute pork in skillet over med-heat/flame.
  • Step #7 Remove pork from pan using a slotted spoon.
  • Step #8 Drain off all but a couple of tbsps grease.
  • Step #9 Saute onions & celery.
  • Step #10 Add into this a small amount of oyster liqueur if onions & celery get too dry.
  • Step #11 Add in oysters with remaining liqueur.
  • Step #12 Cook 7 - 10 mins, until oysters curl on edges.
  • Step #13 Drain this mixture in a colander.
  • Step #14 Combine oyster mixture, sausage, sliced parsley, rice, & seasonings to taste.
  • Step #15 Bake at 350 degrees F (175 degrees C) till heated through.
