Step #1 Heat 10-inch skillet or pancake griddle on medium low heat for 3-4 mins.
Step #2 Place 1 tortilla in ungreased pan.
Step #3 Evenly sprinkle with half the cheese.
Step #4 Add meat, if desired.
Step #5 Cover up with a second tortilla.
Step #6 Heat until bottom becomes lightly browned, 2-3 mins.
Step #7 Carefully turn with a spatula & brown the second side.
Step #8 The melted cheese should hold the two sides together.
Step #9 Repeat with the next two tortillas.
Step #10 Let cool about 1-2 mins then slice into wedges & serve.
Step #11 Serve with you choice of salsa, sour cream, & guacamole.
