Microwaved Pasta & Red Bean Casserole Recipe

Ingredients
  • 1 (8 oz) can tomato sauce .
  • 1 medium onion, sliced .
  • 2 tsps chicken bouillon .
  • 1 garlic clove, minced .
  • 1 c small shell pasta .
  • 1/2 c mozzarella cheese, shredded .
  • 2 tbsps oil .
  • 1 c green peas .
  • 1 (16-19 oz) can red kidney beans .
  • 3/4 c water

Directions
  • Step #1 Place oil, garlic & onion in 2 quart casserole dish.
  • Step #2 Microwave on high for 3-5 mins, until onions are translucent.
  • Step #3 Add beans with liquid, tomatoe sauce, pasta, & water; cook covered for 14-18 mins, bouillon, stirring halfway through, until pasta is done.
  • Step #4 Stir in peas & sprinkle with cheese, then let this stand covered for 5 mins.
