Coriander And Honey Jelly Recipe

Ingredients
  • 3 c sugar .
  • 1/3 c coriander seeds, bruised with the back of a spoon .
  • 1/4 c fresh lemon juice, strained .
  • 1/4 c mild honey .
  • 1 (1 3/4 oz) package dry pectin .
  • 3 c water

Directions
  • Step #1 Boil the water & coriander seeds for 2 mins in a 3-quart saucepan.
  • Step #2 Let stand, covered, for 6 hrs or overnight.
  • Step #3 Strain the infusion through a coffee filter & return 2 1/2 c of the liquid to the pan.
  • Step #4 Add the sugar, lemon juice, & honey.
  • Step #5 Mix well.
  • Step #6 Boil hard & add the pectin.
  • Step #7 Bring to a boil again & boil for exactly 1 min (use a timer).
  • Step #8 Remove from the heat & skim off any foam with a metal spoon that has been dipped in ice water.
  • Step #9 Pour into four sterilized half-pint jars, leaving 1/4 inch headspace.
  • Step #10 Wipe rims of the jars clean & place the hot lids on the jars (follow manufacturer's instructions).
  • Step #11 Place rings on jars & tighten with your fingertips until closed.
  • Step #12 Process for 5 mins in a boiling-water bath.
  • Step #13 Adjust for altitude, if necessary.
