Chicken Brunswick Stew Recipe

Ingredients
  • 1 lb canned tomatoes .
  • 2-3 tbsps butter .
  • 1/4 tsp pepper .
  • 1/2 tsp Tabasco sauce .
  • 1 tsp salt .
  • 1 tsp worcestershire sauce .
  • 1/3 c ketchup .
  • 1 onion, quartered .
  • 1/4 tsp dried marjoram .
  • 1 whole broiler-fryer chicken, cut up .
  • 10 oz frozen butter beans .
  • 2 small potatoes, cubed .
  • 16 1/2 oz white shoepeg corn .
  • 1 tbsp brown sugar .
  • 2-3 tbsps white vinegar .
  • 2 celery ribs, sliced

Directions
  • Step #1 Place chicken in Dutch oven or other heavy stock pot.
  • Step #2 Add enough water to cover well.
  • Step #3 Add onion, celery, salt & pepper.
  • Step #4 Boil until chicken comes off the bone easily.
  • Step #5 Remove chicken to cool.
  • Step #6 To pot add corn, tomatoes, butter beans, potatoes, ketchup & vinager.
  • Step #7 Cook 2 hrs or until tender.
  • Step #8 Remove chicken from bones & add to vegetables along with Worchestershire sauce, Tabasco, marjoram & butter.
  • Step #9 Heat through & serve.
