Cheesy Chicken Broccoli Rotini Recipe

Ingredients
  • 1 c french's cheddar fried onions .
  • 8 oz Velveeta cheese, cubed .
  • 1 (10 3/4 oz) can cream of broccoli soup .
  • salt & pepper .
  • 1 1/2-2 lbs boneless skinless chicken breasts, about 3-4 .
  • 1/2 c sliced onions .
  • 1/2 c mayonnaise .
  • 1 (4 oz) can mushrooms, drained .
  • 1 (10 1/2 oz) box frozen sliced broccoli, thawed, undrained .
  • 1 (10 3/4 oz) can cream of mushroom soup .
  • 1/2 (1 lb) box rotini noodles

Directions
  • Step #1 Spice up chicken breasts with a little salt & pepper, place this in medium frying pan with a little oil.
  • Step #2 Add sliced onions.
  • Step #3 Cover up with tight lid & cook breasts over medium-low heat til done, about 12-18 mins depending on their size.
  • Step #4 Turn breasts & stir onions occaisionally to prevent browning.
  • Step #5 Set aside to cool when done.
  • Step #6 In small pot, cook rotini noodles for 8 mins, drain.
  • Step #7 Meanwhile, mix soups, in large bowl, cheese & mayo.
  • Step #8 Microwave til melted, stirring occaisionally, about 5 mins.
  • Step #9 Cut up chicken & add chicken & onions to cheese mixture.
  • Step #10 Fold in noodles, broccoli, & mushrooms.
  • Step #11 Pour into greased 13x9 pan or casserole dish.
  • Step #12 Bake in 350º oven for 20 mins.
  • Step #13 Top with cheddar fried onions, & bake 5 mins longer.
