Lemon Lovers Pound Cake Recipe

Ingredients
  • Icing .
  • 3 c flour .
  • 3 c sugar .
  • 1/2 tsp baking soda .
  • 1 c butter, no substitutions .
  • 1/4 tsp salt .
  • 3 tbsps fresh lemon juice .
  • 5 tbsps lemon juice .
  • 2 1/2 c confectioners' sugar .
  • 6 large eggs .
  • 2 tsps freshly grated lemon peel .
  • 2 tbsps soft butter .
  • 1 tbsp freshly grated lemon peel .
  • 1/4 c sour cream .
  • 1 1/4 c sour cream .
  • 1 tsp lemon extract

Directions
  • Step #1 In large mixing bowl, cream butter & sugar until light & fluffy, about 5 mins.
  • Step #2 Add eggs, one at a time, beating well after each.
  • Step #3 Stir in lemon juice, peel & extract.
  • Step #4 Combine flour, baking soda & salt & add to creamed mixture alternately with sour cream.
  • Step #5 Beat until just mixd.
  • Step #6 Pour into greased & floured 10" bundt pan.
  • Step #7 Bake at 350° for 55-60 mins or until toothpick comes out clean.
  • Step #8 Cool in pan for 10 mins before removing to wire rack to cool completely.
  • Step #9 For icing, slowly add confectioners sugar, beat sour cream & butter until mixed, then beat in lemon juice & peel.
  • Step #10 Drizzle over cake.
  • Step #11 Store in refrigerator.
