Greek Chicken With Tomatoes And Feta Recipe

Ingredients
  • 2 oz feta cheese, cut into 1/4 inch cubes (about 1/2 c) .
  • 2 tbsps olive oil .
  • 1 c dry white wine .
  • 1 small onion, sliced .
  • 4 plum tomatoes, cored & sliced .
  • 1 tbsp unsalted butter .
  • 6 fresh basil leaves, cut into thin strips, plus more for garnish .
  • 1/2 tsp fresh ground black pepper, plus more to taste .
  • 2 garlic cloves, minced .
  • 1 grated lemon, juice & zest of .
  • 1/2 tsp sea salt, plus more to taste .
  • 2 tbsps sliced fresh oregano (plus more for garnish) .
  • 4 boneless skinless chicken breast halves (about 1 1/2 lbs.) .
  • 1/2 c pitted Greek olives

Directions
  • Step #1 Rinse the chicken breasts under cool water, pat dry & place this in a shallow glass baking dish.
  • Step #2 Stir the lemon zest, salt & pepper together & pour over the chicken, juice, oregano, wine, rubbing it into all sides.
  • Step #3 Cover up & marinate in the refrigerator for several hrs or overnight.
  • Step #4 Bring to about room temp before cooking.
  • Step #5 Heat olive oil & butter In a large-ish skillet, until butter melts & is sizzling.
  • Step #6 Remove the chicken breasts from the marinade, RESERVING the marinade to make the sauce.
  • Step #7 Brown the chicken in the hot skillet, about 4 to 5 mins per side, turning only once, until lightly browned on both sides.
  • Step #8 Transfer to a platter, loosely cover & keep warm while you prepare the sauce.
  • Step #9 Add the onion & tomato to the pan you cooked the chicken in.
  • Step #10 Reduce the heat & cook, stirring frequently, 2 to 3 mins, until the onion is soft & translucent & the tomatoes soften & release liquid.
  • Step #11 Add the garlic & saute for 1 min, stirring constantly.
  • Step #12 Add the reserved marinade & bring to a boil.
  • Step #13 Reduce heat & let simmer for 2 to 3 mins until the liquid has reduced by half.
  • Step #14 Spice up with extra salt & pepper if desired.
  • Step #15 Return the chicken to the skillet with the sauce.
  • Step #16 Add the olives & basil & let simmer on low for 5 to 8 mins until the chicken is cooked through & feels firm to the touch.
  • Step #17 Transfer to a hot platter or individual plates.
  • Step #18 Spoon sauce over each breast & scatter with the feta cubes.
  • Step #19 Garnish with extra fresh basil & oregano leaves.
  • Step #20 Serve warm.
