Dan's Spicy Chili Recipe

Ingredients
  • 2 c water .
  • 1 tsp black pepper .
  • 2 (15 oz) cans black beans or dark red kidney beans .
  • 1 (12 oz) can tomato paste .
  • 2 tsps salt .
  • 1/4-1/2 c cumin .
  • 2-3 lbs ground beef or stewing beef .
  • serrano peppers .
  • 1/2 c cilantro, cousely sliced .
  • 1 large onion .
  • 1/4-1/2 c chili powder .
  • 1 (15 oz) can tomatoes, sliced .
  • 2 tbsps garlic, minced .
  • 2 tbsps olive oil

Directions
  • Step #1 Remember my recipes are just guidelines, not rules.
  • Step #2 If you do not like something in it, remove it or substitute something else.
  • Step #3 If you are going to use peppers, it is best to toast them in the broiler or over an open flame to burn the skins.
  • Step #4 Optional: Split them open & remove the veins & seeds (lower heat, fruitier flavor).
  • Step #5 Coarsely chop the onion.
  • Step #6 Add the onion, garlic, & olive oil to a hot skillet; sauté until the onions are translucent.
  • Step #7 Add ground beef or stewing beef to the onions & garlic.
  • Step #8 When the beef is browned, go ahead & drain grease if there is any.
  • Step #9 Now add the 2 c of water, tomato paste & sliced tomatoes to the beef mixture.
  • Step #10 Start adding your spices as the mixture comes to a low boil.
  • Step #11 Lower your burner to simmer & add your beans.
  • Step #12 Let simmer for 1 to 2 hrs until desired thickness.
  • Step #13 Optional: You can also transfer your chili to a slow cooker (aka crockpot) at this point & cook for an even longer period of time.
  • Step #14 More Fire: Add some of your favorite hot sauce.
  • Step #15 I use something called Vicious Viper.
  • Step #16 Extra Veggies: I like to add a can of whole kernel corn, but any other veggie will work.
