Greek Chicken With Warm Tomato-corn Salad Recipe

Ingredients
  • 2 c corn (from 4 large ears) .
  • salt & black pepper .
  • 6 chicken breast halves .
  • 2 tbsps unsalted butter .
  • roma tomatoes, quartered .
  • 1/4 tsp ground oregano .
  • 2 garlic cloves, finely minced .
  • 1/2 c white wine .
  • 1 medium onion, sliced .
  • 1/2 tsp dried thyme .
  • 1 tbsp olive oil .
  • 1 tbsp fresh lime juice .
  • 1 green pepper or red pepper, seeded & sliced .
  • 1/2 lb cherry tomatoes or grape tomatoes, halved .
  • feta cheese, crumbled

Directions
  • Step #1 Mix oregano, thyme, salt ad pepper together.
  • Step #2 Sprinkle top over chicken & lb between heavy-duty plastic wrap to ½” even thickness.
  • Step #3 Heat oil in skillet over MED-HI; sauté chicken to brown.
  • Step #4 Pour off any drippings from skillet, keeping any brown bits in skillet, & return to moderately high heat.
  • Step #5 Push chicken to one side.
  • Step #6 Add butter, until onion is golden, stirring every once in awhile & scraping up brown bits, onion, & pepper & sauté, about 4 mins.
  • Step #7 Add garlic & sauté, stirring, 1 min.
  • Step #8 Stir in corn & wine; distribute chicken breasts in pan, evenly, & cover skillet.
  • Step #9 Cook until corn is just tender-crisp & chicken juices run clear, about 15-20 mins.
  • Step #10 Remove lid, then add tomatoes & sauté, until tomatoes JUST begin to soften, about 2 mins.
  • Step #11 Remove from heat & stir in the any meat juices on plate & lime juice.
  • Step #12 Serve with warm tomato-corn salad & sprinkle with feta cheese.
