Ingredients
1 tsp vanilla extract .
1/2 c almonds, coarsely sliced .
1/4 c sugar .
2 tbsps raspberry jam .
2 c milk .
1 tsp cinnamon .
confectioners' sugar .
4 eggs .
3 tbsps butter, melted .
10 phyllo pastry sheets
Directions
Step #1 In a heavy saucepan, heat the milk & sugar to scalding.
Step #2 Whirl the eggs in a mixer while slowly pouring in the hot milk.
Step #3 Add the vanilla & cinnamon.
Step #4 If the custard doesn't thicken enough to coat a spoon, return it to the pan & reheat it carefully, stirring constantly until it thickens.
Step #5 If it should curdle slightly while thickening, mix it again.
Step #6 Refrigerate the custard.
Step #7 Using a 7-8 inch plate as a guide, cut 2 circles from each sheet of filo.
Step #8 On buttered baking pans, four sheets to a stack, stack the filo sheets, brushing every second sheet with melted butter.
Step #9 Bake at 350 F for 20 mins until the filo is golden brown.
Step #10 Assemble the bastela.
Step #11 Begin with one pair of filo circles.
Step #12 Spread all of the jam ovr this bottom layer of filo & sprinkle on a few sliced almonds.
Step #13 Add another pair of filo cirles, some almonds, & some of the egg custard.
Step #14 Continue to layer the filo, almonds, & custard until all of the ingredients are used.
Step #15 End with a pair of filo circles.
Step #16 Springle the pastry with confectioners' sugar, cut it into 6 wedges & serve as soon as possible.
