Brandade De Morue Recipe

Ingredients
  • 1 large potato .
  • black pepper (to taste) .
  • 1 3/4 lbs salt cod fish .
  • 2 garlic cloves .
  • 1 c olive oil

Directions
  • Step #1 Soak salt cod 12 hrs, changing water at least 3 times to remove excess salt.
  • Step #2 Boil potato & remove skin.
  • Step #3 Drain cod, then place this in fresh water for 10 mins.
  • Step #4 Remove any skin or bones found in the cod, & flake.
  • Step #5 In food processor/blender, garlic, process cod, & potato until a smooth paste.
  • Step #6 Place paste in a sauce pan over low heat/flame.
  • Step #7 While stirring constantly, add the oil slowly.
  • Step #8 Spice up with pepper to taste & cool.
  • Step #9 Store in refrigerator up to 1 week (never lasts that long for me).
