Ingredients
36 reduced-fat chocolate wafer cookies .
1/4 c Splenda granular .
peanut butter center .
3 tbsps reduced-fat peanut butter .
4 oz unsweetened chocolate .
1/2 c skim milk .
1/2 c Splenda granular .
1/2 c egg substitute .
5 tbsps light butter, melted .
chocolate filling .
1 tsp vanilla .
chocolate wafer crust .
1 3/4 c Splenda granular .
8 oz low-fat cream cheese .
2 oz sugar-free chocolate, melted (optional) .
3 tbsps low-fat cream cheese
Directions
Step #1 Preheat oven to 350°F.
Step #2 Crush cookies into fine crumbs.
Step #3 Blend all crust ingredients together in a small bowl & stir until well mixed, set aside.
Step #4 Make peanut butter center by placing all center ingredients in a small bowl & mix until well mixed, set aside.
Step #5 Chocolate filling:.
Step #6 Melt chocolate in small saucepan over low heat/flame, set aside.
Step #7 Place cream cheese & SPLENDA® Granular in a small mixing bowl, beat until soft.
Step #8 Slowly add skim milk using a wire whisk, mix until smooth.
Step #9 Add melted chocolate, stirring well.
Step #10 Add egg substitute & vanilla, mix until well mixed, set aside.
Step #11 Assembling:.
Step #12 Place 24 mini size foil wrap baking c on a sheet pan or in mini muffin tin.
Step #13 Evenly divide crust between the 24 baking c.
Step #14 Firmly press crusts into the bottom of the c.
Step #15 Place approximately 1/2 tsp of the peanut butter center mix in each crust-lined baking c.
Step #16 Spoon chocolate filling into each baking c.
Step #17 Firmly tap pan on countertop to remove any air bubbles.
Step #18 Bake in a preheated oven 10-15 mins, or until slightly firm to the touch.
Step #19 Chill for approximately 2 hrs before serving.
Step #20 Drizzle optional melted chocolate over the top for a garnish.
