Herbed Potato Soup Recipe

Ingredients
  • 5 large russet potatoes .
  • 1/2 lb bacon .
  • 2 large onions .
  • salt & pepper .
  • 1-1 1/3 tbsp italian seasoning .
  • 2 carrots .
  • 2-3 bouillon cubes (depending on taste)

Directions
  • Step #1 Peel & chop onion & bacon & place this in frying pan.
  • Step #2 Cook until bacon is medium done & onions are translucent & golden.
  • Step #3 Drain fat, set aside.
  • Step #4 Peel & chop carrots & potatoes & place this in large stock pot.
  • Step #5 Add onions & bacon.
  • Step #6 Just cover with warm water.
  • Step #7 Add 2 boullion (broken up) & a 3rd if necessary.
  • Step #8 Salt & Pepper to taste.
  • Step #9 Boil until dead.
  • Step #10 You can not over cook this, you actually want it mushy.
  • Step #11 Halfway through add Italian Spice uping.
  • Step #12 Allow to cool completely.
  • Step #13 Either using a mixer or food processer puree the soup.
  • Step #14 Reheat.
