Snappy Turtle Cookies Recipe

Ingredients
  • 1 1/2 c pecan halves, split lengthwise .
  • 1 tbsp butter .
  • 1/2 c butter, softened .
  • Cookies .
  • 1/4 tsp salt .
  • 1 whole egg .
  • 1 1/2 c flour .
  • 1 c powdered sugar .
  • 1/4 tsp vanilla .
  • 1/3 c semi-sweet chocolate chips .
  • 1 egg, seperated .
  • 1/8 tsp maple flavoring .
  • 3 tbsps milk .
  • Frosting .
  • 1/2 c firmly packed brown sugar .
  • 1/4 tsp baking soda

Directions
  • Step #1 In large bowl, mix brown sugar & 1/2 c butter; beat until light & fluffy.
  • Step #2 Add vanilla, maple flavor, 1 whole egg & 1 egg yolk; beat well.
  • Step #3 Stir in flour, baking soda & salt; mix well.
  • Step #4 Cover up with plastic wrap; put in the fridge about 1 hr for easier handling.
  • Step #5 Heat oven to 350.
  • Step #6 Grease cookie sheets.
  • Step #7 Arrange pecan pieces in groups of 5 on greased cookie sheets to resemble head & legs of turtle.
  • Step #8 In small bowl, beat egg white.
  • Step #9 Shape dough into 1 inch balls.
  • Step #10 Dip bottoms in beatn egg white; press lightly onto pecans.
  • Step #11 Bake at 350 for 10 to 12 mins or until edges are lightly golden brown.
  • Step #12 Immediately remove this from cookie sheets.
  • Step #13 Cool completely.
  • Step #14 In small saucepan, mix chocolate chips, milk & 1 T.
  • Step #15 butter; cook over low heat/flame, stirring constantly until melted & smooth.
  • Step #16 Remove from heat; stir in the powdered sugar.
  • Step #17 Add more powdered sugar if necessary for desired spreading consistency.
  • Step #18 Frost cooled cookies.
  • Step #19 Allow frosting to set before storing.
  • Step #20 Store in airtight container.
