Ingredients
8 cherry tomatoes, halved .
1 tsp dried shrimp (optional, note below) .
1 pomelo fruit, segmented (note below) .
2 tsps peanut oil .
DRESSING .
2 tbsps palm sugar, grated .
1 stalk lemongrass, white part only, very finely shredded .
1/2 c Thai basil .
1 red birds eye chile .
16 green king prawns .
1/2 c mint leaves .
1 garlic clove .
1/4 c lime juice .
1/2 c coriander leaves .
6-8 wing beans, cut into thirds diagonally .
1/4 c fish sauce
Directions
Step #1 To make the dressing, place the chilli, garlic & a pinch of salt into a mortar & lb to a paste with the pestle.
Step #2 Add the shrimp & lb to mix.
Step #3 Add the palm sugar & stir until it has dissolved, then stir in the the lime juice & fish sauce.
Step #4 Remove & discard the prawn heads, then peel the prawns, leaving the tails intact.
Step #5 Using a pair of kitchen tweezers, devein the prawns.
Step #6 Place the prawns into a bowl with the oil, season to taste with salt & freshly ground pepper, then toss to mix.
Step #7 Preheat a chargrill pan until hot, then cook the prawns for 2 mins on each side, or until they are cooked through.
Step #8 Transfer the prawns to a bowl, add the remaining ingredients & dressing, & toss carefully.
Step #9 Serve as soon as possible as a light lunch or as part of a Thai-style banquet.
Step #10 Notes: Pomelos are large citrus fruits, related to the grapefruit.
Step #11 They're available from Asian food stores & from some greengrocers.
Step #12 If they are not available, you can substitute pink grapefruit.
Step #13 Dried shrimp are available from Asian food stores.
Step #14 Wing beans are a distinctive-looking beans which retains their crispness when cooked.
Step #15 Apparently, they are good in salads & stir-fries.
