Cafe Latte Parfait Recipe

Ingredients
  • 100 ml golden caster sugar .
  • 2 tbsps sliced pistachios .
  • 100 ml strong espresso .
  • 80 g semisweet chocolate, sliced .
  • Garnish .
  • 1 tbsp cognac or brandy .
  • 20 g semisweet chocolate, sliced .
  • 2 egg yolks .
  • 200 ml whipping cream

Directions
  • Step #1 Whip egg yolks & sugar until light & foamy.
  • Step #2 In another bowl, whip whipping cream until stiff peaks form.
  • Step #3 Add cold espresso & cognac to yolk mixture, mix to mix.
  • Step #4 Combine whipped cream & yolk mixture; add sliced chocolate, mix.
  • Step #5 Pour into a freezer-proof dish & cover with cling film.
  • Step #6 Freeze for 5-6 hrs or overnight.
  • Step #7 Take the parfait out of the freezer about 15 mins before serving.
  • Step #8 Slice, or shape into balls with an ice-cream scoop.
  • Step #9 Sprinkle top sliced chocolate & pistachios on top.
