Chicken Thighs With Tomatoes, Olives And Capers Recipe

Ingredients
  • 4 tsps minced garlic .
  • 8 boneless skinless chicken thighs .
  • 1 tsp olive oil .
  • 3/4 c sliced fresh parsley .
  • 1/3 c sliced pitted kalamata olives .
  • 1/4 tsp oregano (Greek, if possible) .
  • 2 tsps capers .
  • 1/2 tsp pepper .
  • 22 oz canned sliced tomatoes, undrained (about 1 1/5 14 oz cans)

Directions
  • Step #1 Heat oil In a large-ish skillet.
  • Step #2 Add chicken; cook 4 mins on each side.
  • Step #3 Remove chicken from pan; keep warm.
  • Step #4 Add garlic to pan & sauté 30 seconds.
  • Step #5 Add remaining ingredients; scrape pan to loosen brown bits.
  • Step #6 Return chicken & accumulated juices to pan.
  • Step #7 Reduce heat & let simmer for 5 to 10 mins or until chicken is done.
