Almond Kulfi Recipe

Ingredients
  • 8 whole blanched almonds .
  • 4 tbsps superfine sugar .
  • 1 tbsp sliced almonds .
  • 110 g ground almonds (4 oz) .
  • 1 tsp vanilla extract .
  • 1 (410 g) can evaporated milk (14 oz) .
  • grated chocolate (to garnish) (optional)

Directions
  • Step #1 Whisk the evaporated milk, sugar & vanilla extract (or brandy) for 1 min; add the ground almonds & whisk for a further min; stir in the the flaked almonds.
  • Step #2 Pour the kulfi mixture into an 850ml (1 ½ pint) plastic freezer container & freeze overnight (or for a minimum of 4 hrs).
  • Step #3 Half an hr before serving, remove the container from the freezer & place this in the fridge to soften slightly.
  • Step #4 Cut the kulfi into slices & garnish each portion with a whole blanched almond; sprinkle with grated chocolate, if using.
