Savory Chinese Beef (crock Pot) Recipe

Ingredients
  • 1/2 c water chestnuts, drained .
  • 2 tbsps cornstarch .
  • 1 bunch green onions (about 8 or 1 large leek) .
  • 1/2 tsp hot sauce (optional) .
  • 1 c Chinese pea pods .
  • 1 c low-fat beef broth .
  • 1/2 c low sodium soy sauce .
  • 1/2 c bamboo shoots, drained .
  • 1 c bean sprouts .
  • 1 1/2 lbs sirloin tip steaks (slightly frozen for easier slicing) .
  • 1/2 tsp ground ginger (or 1/2 tsp fresh minced ginger) .
  • 2 tbsps lukewarm water

Directions
  • Step #1 Thinly slice the sirloin.
  • Step #2 Wash all the fresh vegetables.
  • Step #3 Finely chop the onions (or leek).
  • Step #4 Place the sirloin in the slow cooker (aka crockpot), 3-6 quarts size pot.
  • Step #5 Pour broth, sauce, ginger & onion over the beef.
  • Step #6 Cover up & cook on low, 6-7 hrs.
  • Step #7 Uncover & turn to high.
  • Step #8 Mix cornstarch & water in a small measuring c.
  • Step #9 Stir this mixture with the hot sauce into the cooker.
  • Step #10 Leaving lid slightly ajar, cook on high for 15 mins until thickened, stirring every once in awhile.
  • Step #11 During last 5 mins of thickening add sprouts, pea pods, water chestnuts & shoots.
  • Step #12 Cook 5-10 mins until hot.
  • Step #13 Serve in individual bowls over Chinese noodles.
