Black Bean Burritos Recipe

Ingredients
  • 1/4 c fresh cilantro, sliced .
  • 3 tbsps lime juice .
  • fixins for burritos .
  • 3 green onions, coarsely sliced .
  • 10 flour tortillas .
  • 1 garlic clove, crushed .
  • 1 fresh tomato, sliced .
  • grated monterey jack cheese .
  • 2 c cooked rice .
  • 1/4 tsp crushed red pepper flakes .
  • 1/4 c canola oil .
  • 2 ripe Hass avocadoes, mashed .
  • 1 (14 1/2 oz) can black beans, drained .
  • 1/4 tsp hot sauce .
  • salt & freshly ground black pepper

Directions
  • Step #1 1.
  • Step #2 In a large bowl mix together the beans, tomato, green onion, & cilantro.
  • Step #3 Set aside.
  • Step #4 2.
  • Step #5 In a small bowl, mix the garlic & the lime juice.
  • Step #6 In a slow, steady stream whisk in the oil until the dressing has emulsified.
  • Step #7 Combine the lime dressing & bean mixture.
  • Step #8 Stir in the crushed red pepper & hot sauce.
  • Step #9 Spice up with salt & freshly ground pepper.

  • Step #11 Preheat the oven to 350 degrees.
  • Step #12 Soften the tortillas briefly in the oven; remove this from oven.
  • Step #13 4.
  • Step #14 Spread on the avocado, followed by the cheese, rice, & bean mixture.
  • Step #15 Roll up the tortillas & arrange on a baking sheet.
  • Step #16 Place in the oven & heat through for 15 mins or until the cheese has melted.
