Mandarin Pasta Salad Recipe

Ingredients
  • DRESSING .
  • 1 garlic clove, minced .
  • 2 bunches green onions, sliced .
  • 1 tbsp sugar .
  • 1 (8 oz) can sliced water chestnuts, drained .
  • 3 tbsps soy sauce .
  • 2 c fresh mushrooms, sliced .
  • 2 c carrots, shredded .
  • 2 garlic cloves, minced .
  • 1 1/2 tsps seasoning salt .
  • 2/3 c oil, canola or vegetable .
  • 1/2 c white balsamic vinegar or white wine vinegar .
  • 1 (6 oz) package frozen snow peas, thawed & drained .
  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes .
  • 1 tbsp honey .
  • 2 (11 oz) cans mandarin oranges .
  • 2 tbsps butter or margarine .
  • 1 (1 lb) package angel hair pasta, broken into thirds (cappelini) or thin spaghetti, broken into thirds (vermacelli) .
  • 3 tbsps sesame seeds, toasted .
  • 1/2 tsp ground ginger

Directions
  • Step #1 Cook pasta according to package directions.
  • Step #2 Drain pasta, rinsing with cold water; set aside.
  • Step #3 In large skillet, saute chicken & garlic in butter until chicken juices run clear; sprinkle with seasoned salt.
  • Step #4 Remove chicken with a slotted spoon; set aside.
  • Step #5 In same skillet, saute water chestnuts for 2-3 mins.
  • Step #6 Meanwhile, drain oranges, reserving 1/2 c juice.
  • Step #7 In a large serving bowl, chicken, mushrooms, pasta, mix oranges, peas, water chestnuts, carrots & onions.
  • Step #8 In a quart-sized jar or similar container with tight-fitting lid, sugar, vinegar, mix the oil, garlic, soy sauce, honey, ginger & reserved mandarin orange juice; shake well.
  • Step #9 Pour over pasta mixture & toss.
  • Step #10 Sprinkle top with sesame seeds.
  • Step #11 Refrigerate until serving.
