Chicken Satay Recipe

Ingredients
  • 1/4 packet sugar substitute
  • 1/4 tsp garlic powder
  • 1 1/2 tbsps water
  • 1/2 tbsp fresh lemon juice
  •  
  • sprinkle of cayenne pepper to taste
  • 1 boneless, skinless chicken breast
  • 1/2 tbsp light soy sauce
  • PEANUT SAUCE
  • 1 1/2 tbsps trans-fat free peanut butter
  • 1 tbsp light soy sauce

Directions
  • Step #1 To make peanut sauce: Place the ingredients in a bowl & stir well.
  • Step #2 Microwave for 30 seconds.
  • Step #3 Pound chicken breasts between pieces of plastic wrap to a uniform thickness.
  • Step #4 Rub each breast with about 1 tbsp of light soy sauce.
  • Step #5 Then season both sides of each breast with a couple pinches of salt & pepper.
  • Step #6 Place in a skillet & grill a couple mins per side.
  • Step #7 Remove & cut into strips or cubes & thread onto skewers.
  • Step #8 Dip into peanut sauce & enjoy.
