Cavolfiore Stufato (italian Stewed Cauliflower) Recipe

Ingredients
  • salt .
  • garlic cloves .
  • 1 large cauliflower .
  • 1/2 lb tomatoes .
  • 3 tbsps extra-virgin olive oil

Directions
  • Step #1 Parboil the cauliflower for five mins in salted water(or cook in a steamer for ten mins) then break it into florets.
  • Step #2 Put the garlic & oil into a large pan or flameproof dish, heat through & then add the cauliflower, turning it over carefully.
  • Step #3 When it is well softened (about ten mins) add the puréed tomatoes & then cover.
  • Step #4 Cook together carefully for five mins so that the flavours mix.
  • Step #5 Taste for salt, remove the garlic & serve hot.
