Finnish Baked Mushrooms Recipe

Ingredients
  • 4 egg yolks, lightly beaten .
  • 1/4 c breadcrumbs, fine, dry .
  • 2 c heavy cream .
  • 2 tbsps onions, finely minced .
  • 1 pinch salt & pepper (or to taste) .
  • 1 tbsp lemon juice .
  • 1 tbsp butter .
  • 3 tbsps flour .
  • 1 lb mushrooms, sliced thin .
  • 1/4 c butter

Directions
  • Step #1 Mix the breadcrumbs with 1 tbsp butter & toast until golden brown, stirring often to prevent burning.
  • Step #2 To the sliced mushrooms add the lemon juice, butter, onion, salt, & pepper.
  • Step #3 Saute until onions tender.
  • Step #4 Heat the cream to just short of the boiling point.
  • Step #5 Stir the flour into the mushrooms, stirring rapidly to prevent lumping.
  • Step #6 Stir in a bit of the cream.
  • Step #7 Stir in each egg yolk separately.
  • Step #8 Stir in the remaining cream.
  • Step #9 Cook, covered, until the sauce is just short of boiling.
  • Step #10 Sprinkle top with the toasted bread crumbs & let sit 5 mins before serving.
  • Step #11 Note: The thicker the cream the better the dish tastes.
  • Step #12 Half & half is better than milk & whipping cream is best of all.
