Cranberry Cream Pie Recipe

Ingredients
  • 3 tbsps confectioners' sugar
  • 1 c dried cranberries
  • 2 eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 c all-purpose flour
  • 1/4 c butter, sliced
  • 1/2 c sour cream
  • 1 c white sugar
  • 1 (9 inch) pie crust, baked
  • 1/8 tsp salt
  • 2 1/4 c milk
  • 2 c boiling water to cover
  • 1 c heavy whipping cream

Directions
  • Step #1 Pour boiling water over the cranberries to cover.
  • Step #2 Let stand for 5 mins & drain.
  • Step #3 In a medium heavy-bottomed saucepan, mix the sugar, flour & salt.
  • Step #4 Gradually stir in the the milk & eggs.
  • Step #5 Cook over med-heat/flame, stirring constantly, until the mixture thickens & boils.
  • Step #6 Boil & stir for 2 mins.
  • Step #7 Remove from heat.
  • Step #8 Stir in the sour cream, butter, & cranberries; pour mixture into the baked pastry shell.
  • Step #9 Cover with plastic wrap.
  • Step #10 Refrigerate for several hrs or overnight.
  • Step #11 Whip the cream until soft peaks form, fold in the confectioners' sugar & vanilla.
  • Step #12 Swirl over the top of the cooled & set pie.
