Lemon Prawns And Linguine Recipe

Ingredients
  • fresh ground pepper .
  • 2 tbsps olive oil .
  • sea salt .
  • 1/2 c flat leaf parsley, sliced .
  • 400F g linguine .
  • 1 onion, sliced .
  • 1 kg prawns .
  • 2 lemons, juice & zest of .
  • 1 garlic clove, sliced .
  • 30 g unsalted butter, cubed

Directions
  • Step #1 Peel & devein prawns leaving tails.
  • Step #2 Meanwhile cook pasta in saucepan with plenty of salted water until al dente.
  • Step #3 Drain pasta & reserve 125ml of pasta water.
  • Step #4 Transfer pasta water to seaparate bowl, set aside.
  • Step #5 Meanwhile heat oil in frying pan.
  • Step #6 Add onion & cook 5 mins until softened.
  • Step #7 Add prawns & garlic & cook tossing 5 mins more.
  • Step #8 Return cooked pasta to original saucepan.
  • Step #9 Turn heat back on & add prawn mixture, butter, lemon zest, 60ml lemon juice, parsley & reserved water.
  • Step #10 Toss until mixd & warmed through.
  • Step #11 Spice up & serve.
