Nut-glazed Cake Recipe

Ingredients
  • 3 tbsps butter .
  • 1 c buttermilk (or sour milk) .
  • 1 1/4 c sugar .
  • 1/4 lb walnuts, sliced (about 1 1/2 c) .
  • 1 3/4 c flour .
  • 1 tbsp water .
  • 2 eggs .
  • 1/3 c brown sugar .
  • 1 c heavy cream, whipped .
  • 1 oz unsweetened chocolate .
  • 1 tsp salt .
  • 1/2 c vegetable shortening .
  • 3/4 tsp baking soda

Directions
  • Step #1 Melt butter in the bottom of a 9 inch square cake pan, & mix in the brown sugar & water.
  • Step #2 Sprinkle top the sliced walnuts over the mixture.
  • Step #3 Melt the chocolate in a bowl set over a pan of simmering water.
  • Step #4 Remove from heat when melted, & let cool for just a few mins, stirring to prevent it from hardening.
  • Step #5 In a separate bowl, cream the shortening with sugar until fluffy.
  • Step #6 Add eggs, one at a time, beating after each.
  • Step #7 Beat in the melted chocolate.
  • Step #8 Sift the flour, baking soda, & salt.
  • Step #9 Blend the dry ingredients into the creamed mixture, alternating with the milk.
  • Step #10 Spoon the batter over the walnuts in the cake pan.
  • Step #11 Bake at 350 F for about 50 mins, or until a toothpick inserted in center comes out clean.
  • Step #12 Let cool 5 mins.
  • Step #13 Turn cake out onto a serving plate.
  • Step #14 Serve warm with whipped cream.
