Christmas Wreath Cake Recipe

Ingredients
  • 1/2 c flaked coconut
  • 1 c red & green candied cherries
  • 1 c butter
  • 1 tsp baking powder
  • 1 1/4 c white sugar
  • 3/4 c dates, pitted & sliced
  • 1 1/2 c raisins
  • 3 c all-purpose flour
  • 2 tsps lemon juice
  • 1/2 tsp salt
  • 4 eggs
  • 3/4 c finely sliced candied pineapple
  • 1 tsp lemon zest
  • 3/4 c sliced walnuts

Directions
  • Step #1 Preheat oven to 300F degrees F (150 degrees C).
  • Step #2 Line a tube pan with 2 layers of brown paper, & grease well.
  • Step #3 In a large bowl, baking powder, whisk together flour, & salt.
  • Step #4 Mix in raisins, cherries, pineapple, dates, nuts, & coconut.
  • Step #5 Stir until all fruit is coated.
  • Step #6 In another large bowl, cream the butter or margarine with the white sugar.
  • Step #7 Add lemon rind, lemon juice, & eggs; mix well.
  • Step #8 Stir in fruit mixture.
  • Step #9 Spread batter into prepared pan.
  • Step #10 Bake for 2 hrs.
  • Step #11 Cool.
