Sweet-and-sour Thai Shrimp Salad Recipe

Ingredients
  • 1 small savoy cabbage or iceberg lettuce, shredded (4 c) .
  • 1/4 tsp crushed red pepper flakes (to taste) .
  • 3 tbsps dry-roasted unsalted peanuts .
  • 1/4 c bottled clam juice .
  • 12 oz medium shrimp, peeled & deveined .
  • 2 tbsps fresh lime juice .
  • 1 large carrot, peeled & grated (1 c) .
  • 1 1/2 tbsps olive oil .
  • 4 oz bean sprouts .
  • 3 tbsps sweetened flaked coconut .
  • 1 scallion, including top, thinly sliced

Directions
  • Step #1 In a large saucepan, bring water to boil.
  • Step #2 While water is boiling, heat oil in a small saucepan over low heat/flame.
  • Step #3 Add red pepper flakes & cook, stirring every once in awhile for approximatley 3 mins.
  • Step #4 Strain oil into a small bowl, discarding the red pepper flakes & whisk in clam & lime juices.
  • Step #5 Set aside dressing mixture.
  • Step #6 When water has come to a boil drop in shrimp & reduce heat to medium-low.
  • Step #7 Simmer approximately 2 mins or until shrimp turn opaque.
  • Step #8 Drain shrimp & rinse under cold water to prevent further cooking, drain well.
  • Step #9 In a large bowl, carrot, bean sprouts, coconut, peanuts, transfer shrimp & add cabbage, & scallion.
  • Step #10 Pour dressing over salad & toss to coat.
