Ingredients
white pepper .
salt .
1 tsp lemon juice .
1 (2 1/2 lb) chickens .
1 small black truffle (ca 1/2 oz) .
2 oz butter, room-tempered
Directions
Step #1 Heat the oven with grill to 200 deg C/400 deg F Rinse the chicken & pat dry.
Step #2 Finely slice or chop the truffle.
Step #3 Mix half of the butter with salt, pepper, truffle & lemon juice.
Step #4 Melt the rest of the butter.
Step #5 Carefully loosen the skin from the breasts using your fingers, but leaving the skin on, making pockets.
Step #6 Be careful not to break the skin.
Step #7 Fill the "pockets" with the butter mixture.
Step #8 Tie up the chicken nicely.
Step #9 Roast the chicken for about one hr, turning every once in awhile & brushing with the remaining butter, until beautifully brown on all sides.
Step #10 Serve hot as a main course, or cold as finger food.
