Carrots In Honey And Vinegar Recipe

Ingredients
  • 1 c white wine vinegar .
  • 1 lb baby carrots .
  • 2 tbsps honey, plus .
  • 2 tsps honey .
  • 1/4 tsp pepper .
  • 2 tsps pickling salt .
  • 4 sprigs fresh dill .
  • 1 c water

Directions
  • Step #1 Scrub the carrots & trim their green tops, leaving 3 inches, if desired.
  • Step #2 Remove the root end (the tip).
  • Step #3 Blanch the carrots in boiling water for 2 mins, then as soon as possible plunge into ice water.
  • Step #4 Drain well.
  • Step #5 Combine the vinegar, salt, honey, water, & pepper in a nonreactive (stainless steel) saucepan & boil until the honey has dissolved.
  • Step #6 Evenly divide the carrots into hot, clean jars, wedging the carrots & stacking some upside down.
  • Step #7 Fill the jars with the hot liquid, leaving 1/2 inch of headspace.
  • Step #8 Add 2 sprigs of dill to each jar.
  • Step #9 (You can add the dill before the carrots if you want to see it in the finished product.
  • Step #10 ) Cap & seal.
  • Step #11 Process for 30 mins in a boiling-water-bath canner.
  • Step #12 Let the flavors marry for 2 weeks before using.
  • Step #13 Adjust for altitude if necessary.
