Crab Stuffed Fish Recipe

Ingredients
  • 6 fish fillets (about 2 lbs total) .
  • 1 celery rib, finely sliced .
  • paprika, to taste .
  • 1/4 c sliced parsley .
  • 1/8 tbsp crushed red pepper flakes .
  • 6 tbsps butter, divided .
  • 1 (4 1/2 oz) can crabmeat, drained & flaked .
  • 1 small onion, finely sliced .
  • 1 tbsp lemon juice .
  • 1/2 c dry Italian breadcrumbs

Directions
  • Step #1 Preheat the oven to 400°F Coat a 9 by 13 " baking dish w/ non stick cooking spray.
  • Step #2 In a large skillet melt 4 T butter over medium-high heat.
  • Step #3 Add celery, onion & parsley.
  • Step #4 Saute until tender.
  • Step #5 Remove from heat & stir in the crabmeat, bread crumbs, lemon juice & red pepper flakes.
  • Step #6 Spoon crabmeat mixture evenly over the filets.
  • Step #7 Starting from the small end, roll up each fillet, jelly roll- style.
  • Step #8 Place the rolls seam side down in baking dish.
  • Step #9 Melt the remaining butter & drizzle over fillets.
  • Step #10 Sprinkle top with paprika.
  • Step #11 Bake for 20 -25 mins, or until fish flakes easily with a fork.
