Roasted Veggie Lasagna Recipe

Ingredients
  • 3 medium zucchini, 1/2 inch pieces .
  • 4 garlic cloves, sliced .
  • 9 whole wheat lasagna noodles, cooked .
  • 2 tbsps olive oil .
  • 1/4 tsp pepper .
  • 1 tsp salt .
  • 4 small tomatoes, seeded & sliced .
  • 3 medium sweet red peppers, sliced .
  • 3/4 c mozzarella cheese, cut into pea size chunks .
  • 1/4 c grated parmesan cheese

Directions
  • Step #1 Preheat oven to 425.
  • Step #2 In roasting pan, mix vegetables & garlic in olive oil.
  • Step #3 Bake 20 mins or until tender.
  • Step #4 Place half of the vegetables, pepper, salt, & 1/2 c water in a food processor/blender & mix until smooth.
  • Step #5 Spoon 1/2 c of the puree into the bottom of a 9x13 pan.
  • Step #6 Place 3 noodles over puree, 1/2 of remaining vegetables, top this with 1/2 puree, 2 TB.
  • Step #7 of parmesan cheese, & 1/4 c of mozzarella cheese.
  • Step #8 Repeat layer & then top this with remaining 3 noodles, puree & cheese.
  • Step #9 Bake until bubbly, about 45 mins.
