Cold Chili Orange Noodles Recipe

Ingredients
  • 12 oz thin egg noodles .
  • 2 tbsps cilantro, fresh, sliced .
  • 3 tbsps roasted peanuts, sliced .
  • 4 tbsps bean sprouts .
  • 3 oranges, zest of, finely sliced (use the oranges for some thing else) .
  • 2 tbsps kosher salt (or to taste) .
  • 1 c black soy sauce .
  • 3 tbsps carrots, finely shredded .
  • 1 c chili oil .
  • 1 c cider vinegar .
  • For the Noodles .
  • 2/3 c granulated sugar .
  • For the Chili-Orange Sauce .
  • 1 tbsp sesame oil .
  • 2 tbsps scallions, thinly sliced

Directions
  • Step #1 For the Sauce:.
  • Step #2 Combine all the ingredients for the sauce in a mixer & puree for thirty seconds.
  • Step #3 Place sauce in a jar & keep, covered, in the fridge.
  • Step #4 For the Noodles:.
  • Step #5 Cook noodles according to package directions until al dente.
  • Step #6 Remove from boiling water & shock in ice water & drain again.
  • Step #7 Toss noodles with sesame oil.
  • Step #8 Blanch bean sprouts in boiling water (from the pasta) & shock them in ice water.
  • Step #9 When ready to Serve:.
  • Step #10 Place noodles in bowl & toss with 1/4 c of Chili-Orange Sauce.
  • Step #11 Add bean sprouts & carrots & toss again.
  • Step #12 Add extra sauce if necessary but don't overdo.
  • Step #13 Mound noodle mixture in the center of a serving bowl & garnish with nuts, scallions & cilantro.
