Old-fashioned Kolaches Recipe

Ingredients
  • 1/2 c butter .
  • 1 (1/4 oz) package dry yeast .
  • 5 c flour .
  • 1/2 c sugar .
  • 1 c milk, scalded .
  • 3 large eggs, beaten .
  • 1 tsp salt

Directions
  • Step #1 Scald milk.
  • Step #2 Add sugar & butter & stir this to dissolve.
  • Step #3 Allow it to cool to warm, then add the yeast & let it begin to work.
  • Step #4 Add eggs.
  • Step #5 Put milk mix In a large-ish mixing bowl.
  • Step #6 Measure the flour & salt into another bowl.
  • Step #7 With a mixer slowly work the flour mix into the dough bowl.
  • Step #8 When the dough becomes too thick for the mixer to handle, start working in the flour by hand.
  • Step #9 When dough starts to come together & leave the sides of the bowl, it's just right.
  • Step #10 Form the dough into a ball & cover.
  • Step #11 Let rise in warm place until double its size.
  • Step #12 Turn the dough out on a lightly floured surface & knead carefully until it comes together & is soft & elastic.
  • Step #13 Divide dough into egg-size pieces.
  • Step #14 Flatten & form into square or round.
  • Step #15 Make a depression in the center with your floured thumb.
  • Step #16 Fill the depression with 1 rounded tsp of filling.
  • Step #17 Let the filled kolaches rise about 20 mins.
  • Step #18 Brush tops with beaten egg mixed with a little milk & sugar.
  • Step #19 Bake at 350° for 15-20 mins or until lightly browned.
  • Step #20 Sprinkle top you fresh out-of-the-oven kolaches with powdered sugar before serving.
  • Step #21 FILINGS: Apricot: Place 1 lb dried apricots in a pan with cool water.
  • Step #22 Let soak several hrs.
  • Step #23 Bring to slow simmer & add sugar to taste.
  • Step #24 Cook until very soft.
  • Step #25 Stir to get a smooth consistency.
  • Step #26 Prune: Made the same way as the apricot filling.
  • Step #27 Pineapple: Simmer well drained canned, crushed pineapple until it thickens.
  • Step #28 Poppy seed: 1/2 lb ground poppy seeds, 1 c sugar, 1/2 tsp salt, 1 tsp vanilla.
  • Step #29 Add enough milk to make a thick mis.
  • Step #30 Let stand overnight to absorb the liquid.
  • Step #31 Cream cheese: 8 oz cream cheese, 1 tsp lemon juice, 3/4 tsp vanilla, 1/2 c sugar, 1 tsp sour cream.
  • Step #32 Mix together until smooth.
  • Step #33 Sausage: Take a small piece of sausage & wrap dough around the piece & bake.
  • Step #34 You can use just about any fruit filling in the kolaches, just don't use jam or jelly.
  • Step #35 They liquefy with the heat in the oven.
