Swedish Orange Gingersnaps Recipe

Ingredients
  • 2 tsps ground ginger .
  • 1 tbsp orange juice .
  • 1 tsp baking soda .
  • 1/2 tsp ground cloves .
  • 2 tsps ground cinnamon .
  • 1 tbsp orange zest, finely grated .
  • 2 3/4-3 c flour .
  • 1 c brown sugar .
  • 2 tbsps molasses .
  • 3/4 c unsalted butter .
  • 1 large egg .
  • 1 tsp molasses

Directions
  • Step #1 In a large mixing bowl or using a standing mixer cream the butter & sugar until light & well mixd, beat in one egg.
  • Step #2 Add the molasses, orange juice, & zest.
  • Step #3 Sift the dry ingredients together & stir in theto the mixture making a soft, smooth dough.
  • Step #4 More flour can be added if dough is too sticky.
  • Step #5 Place dough on lightly floured surface & knead the dough three times.
  • Step #6 Seperate dough into three pieces & shape into logs, approximately eight inches long.
  • Step #7 Wrap logs well in plastic wrap & put in the fridge for at least 1 hr or overnight.
  • Step #8 Preheat oven to 350 degrees.
  • Step #9 Slice logs into circles, 1/8-inch thick or less & place on lightly greased cookie sheets.
  • Step #10 Bake for about 8 to 10 mins or until lightly browned.
  • Step #11 When baked, place cookies on wire racks to cool.
