1 1/2 lbs small potatoes (as evenly sized as possible) .
3/4 tsp chili powder .
1/2 pint water .
1 tsp cumin seeds .
1 tsp ground coriander .
3 medium tomatoes (skinned & copped) .
1 tsp paprika .
4 tbsps oil .
1 pinch asafetida powder .
1/2 tsp garam masala .
3/4 tsp ground turmeric .
1 tsp salt
Directions
Step #1 Wash the potatoes & dry them, lightly peel the skins if necessary.
Step #2 Heat the oil In a large-ish saucepan, add the cumin seeds & asafetida & let them sizzle for a few seconds.
Step #3 Add the tomatoes, paprika & salt; fry for 30 seconds, ground coriander, turmeric, chilli, stirring constantly (sprinkle on a little water if things start to stick to the bottom of the pan).
Step #4 Add the potatoes & fry for 2-3 mins, again stirring constantly.
Step #5 Add the water, bring to the boil then lower the heat, cover & cook for about 15 mins until the potatoes are tender (keep an eye on things in case you need to add a bit more water); now stir in the the garam masala.
Step #6 Remove from heat & serve garnished with the coriander leaves.
