Cawl Tomato Ac Afal (welsh Tomato And Apple Soup) Recipe

Ingredients

1 1/2 lbs onions .
2 c cream (optional) .
1 lb cooking apples .
chives (to garnish) .
2 1/2 c chicken stock .
1 lb tomatoes .
salt & pepper

Directions

Step #1 Score a small x with a knife on the bottom of each tomatoe.
Step #2 Place the tomatoes in boiling water for 2-3 mins.
Step #3 Remove to cold water; the skins will peel off easily.
Step #4 Cut up the tomatoes.
Step #5 Peel & dice the onions & apples.
Step #6 Place the tomatoes, onions & apples with the stock in a saucepan.
Step #7 Spice up to taste.
Step #8 Note: If you wish to make this a cream soup, add the cream now.
Step #9 Bring to the boil & let simmer for 20 mins until the onions are soft.
Step #10 Puree the mixture & then strain to remove the tomato pips.
Step #11 The soup should be completely smooth.
Step #12 Serve hot garnished with chives or chilled.
