Greek Rice Pilaf Recipe

Ingredients
  • 1 large onion, sliced (about 1 1/2 c) .
  • 2 tbsps olive oil .
  • 4 c fresh spinach, sliced .
  • 1 c feta cheese, crumbled .
  • 2 tbsps fresh dill, sliced .
  • 1/8 tsp ground black pepper .
  • 1 c green peas, fresh or frozen .
  • 4 c cooked rice .
  • 1 tbsp dried mint .
  • 1-2 garlic clove, minced .
  • 3 tbsps fresh lemon juice

Directions
  • Step #1 In a heavy skillet, saute the onions in oil on medium heat until they begin to soften.
  • Step #2 Add the garlic, mint & pepper & saute for 2 more mins.
  • Step #3 Stir in the spinach, lemon juice, rice & green peas.
  • Step #4 Add the dill.
  • Step #5 Cover up & cook for 3-4 mins, stirring every once in awhile.
  • Step #6 When the spinach is limp & the rice is hot, top this with the feta & serve as soon as possible.
