Champagne Infused Strawberry Soup Recipe

Ingredients
  • lime sorbet (yogurt or vanilla ice cream may be substituted) (optional) .
  • 4 c water .
  • 1 c sugar .
  • 6 mint leaves, plus more, for garnish .
  • 9 c strawberries (frozen can be used) .
  • 1/2 c champagne (or sparkling wine) .
  • 1 lemon, juice of

Directions
  • Step #1 In a saucepan, sugar, bring water, lemon juice, strawberries, & Champagne to a boil.
  • Step #2 Let simmer for 10 mins, then add mint leaves.
  • Step #3 Let cool to about room temp.
  • Step #4 Blend together with an immersion mixer or in a standing mixer, then strain through a sieve.
  • Step #5 Chill in the refrigerator, covered, for 3 hrs.
  • Step #6 Serve in soup bowls with a scoop of ice cream, sorbet, or plain/vanilla/lemon yogurt.
  • Step #7 Or just plain! Garnish with mint leaves.
