Kielbasa And Lentil Soup Recipe

Ingredients
  • 1 lb kielbasa (sliced 1/4-inch) .
  • 1 stalk celery (sliced) .
  • 2 tbsps vegetable oil .
  • 2 carrots (sliced) .
  • 3-4 c beef broth .
  • 1 1/4 c dried lentils .
  • 14 1/2 oz sliced tomatoes .
  • 1 bay leaf .
  • 1 onion (sliced) .
  • 1 garlic clove (minced) .
  • 1/4 c parsley (minced) .
  • 1 1/2 c water .
  • 1/2 tsp salt .
  • 1/8 tsp pepper

Directions
  • Step #1 Heat oil in 4 quart saucepan over moderate heat.
  • Step #2 Brown meat for 5 mins, remove & drain on paper towels.
  • Step #3 Remove all but 1 tbsps of fat from pan.
  • Step #4 Saute carrots, celery, onion, garlic & parsley in same pan until onion & celery is tender.
  • Step #5 Add lentils, tomatoes, bay leaf, stock, water & meat; bring to a simmer.
  • Step #6 Reduce heat to low, partially cover & cook for 40 mins or until lentils are tender.
  • Step #7 Spice up with salt & pepper; discard bay leaf.
  • Step #8 Serve with crusty bread & butter.
