Asparagus With Gorgonzola Sauce Recipe

Ingredients
  • 6 oz whipping cream .
  • extra-virgin olive oil .
  • 2 lbs asparagus .
  • 2 oz parmigiano-reggiano cheese .
  • 2 medium leeks, finely sliced .
  • 4 leaves sage, finely sliced .
  • breadcrumbs .
  • 2 oz gorgonzola, cubed

Directions
  • Step #1 Thoroughly clean the asparagus, cutting the tougher edge off.
  • Step #2 Bind them in small bunches & blanch.
  • Step #3 Let cool.
  • Step #4 Meanwhile, grease a baking pan & place the asparagus with the edges to the center of the pan.
  • Step #5 Finely slice the leek.
  • Step #6 Heat some olive oil in a pan, pour the leek in & carefully sauté over med-heat/flame for 10 mins.
  • Step #7 Add the sage, the whipping cream & the Gorgonzola cheese & cook for 2-3 mins or until the sauce begins to thicken.
  • Step #8 Pour the Gorgonzola sauce on the asparagus, dust with a mixture of grated Parmigiano & breadcrumbs & broil under the grill for 10 mins.
  • Step #9 Serve as soon as possible.
