Step #1 Thoroughly clean the asparagus, cutting the tougher edge off.
Step #2 Bind them in small bunches & blanch.
Step #3 Let cool.
Step #4 Meanwhile, grease a baking pan & place the asparagus with the edges to the center of the pan.
Step #5 Finely slice the leek.
Step #6 Heat some olive oil in a pan, pour the leek in & carefully sauté over med-heat/flame for 10 mins.
Step #7 Add the sage, the whipping cream & the Gorgonzola cheese & cook for 2-3 mins or until the sauce begins to thicken.
Step #8 Pour the Gorgonzola sauce on the asparagus, dust with a mixture of grated Parmigiano & breadcrumbs & broil under the grill for 10 mins.
Step #9 Serve as soon as possible.
