Country Fried Corn Recipe

Ingredients
  • 6 ears fresh corn .
  • 2 tbsps sugar .
  • 3 slices country bacon, pork side meat or best of all country ham fat .
  • 1/4 c milk .
  • 2 tsps cornstarch .
  • 1 tbsp butter .
  • 2/3 c water .
  • salt

Directions
  • Step #1 In large bowl, use a sharp knife to cut tips of kernels from ears of corn.
  • Step #2 Scrape cobs with knife to get out all the juice; set aside.
  • Step #3 Cook bacon in heavy skillet until crisp (if using side meat or ham fat, cook this until fat is rendered); remove this from skillet & reserve.
  • Step #4 Stir corn into hot bacon drippings; add water & sugar.
  • Step #5 Cook, stirring constantly, until mixture begins to thicken.
  • Step #6 Gradually stir milk into cornstarch until smooth.
  • Step #7 Add cornstarch mixture to corn; cook over low heat/flame until thickened.
  • Step #8 Stir in butter & salt.
  • Step #9 Serve topped with reserved crumbled bacon.
