Christmas Cherry Cake Recipe

Ingredients
  • 8 oz halved glace cherries
  • 12 oz raisins
  • 1 c white sugar
  • 1/2 c orange juice
  • 2 c all-purpose flour
  • 1 c butter
  • 2 eggs
  • 1 tsp baking powder

Directions
  • Step #1 Preheat oven to 300F degrees F (150 degrees C).
  • Step #2 Grease & line with parchment paper one 9x5 inch loaf pan.
  • Step #3 Cream butter or margarine & sugar together until light & fluffy.
  • Step #4 Add beaten eggs & orange juice & mix well.
  • Step #5 Sift flour & baking powder.
  • Step #6 Reserve 1/3 c of flour mixture & toss with raisins & cherries (this will keep them from sinking to the bottom of the cake).
  • Step #7 Add flour mixture to batter & mix.
  • Step #8 Add floured raisins & cherries to dough & mix until just mixd.
  • Step #9 Pour batter into prepared pan.
  • Step #10 Bake at 300F degrees F (150 degrees C) for 2-1/2 hrs.
  • Step #11 Don't serve until several days old.
  • Step #12 Wrap the cake in plastic wrap or foil & store this in a sealed tin.
