Buttermilk And Herb Mashed Potatoes Recipe

Ingredients
  • 2 tsps finely sliced fresh tarragon .
  • 1 1/2 tbsps sliced parsley .
  • 1 1/2 tbsps snipped chives .
  • 1 3/4-2 c low-fat buttermilk .
  • 8 large yukon gold potatoes, peeled & cut into chunks .
  • 1/2-3/4 tsp salt .
  • 3 tbsps butter .
  • 1/2 tsp pepper

Directions
  • Step #1 In a large pot, boil the potato chunks in salted water over high heat.
  • Step #2 Cook until the potatoes are tender, 10 - 15 mins.
  • Step #3 Drain.
  • Step #4 Return the potatoes to the pot.
  • Step #5 Add the butter & buttermilk & mash well.
  • Step #6 Add in the remaining ingredients & mix/mash to desired smoothness.
